Recipe: Simple, Easy, Tender Chicken Breast

This lovely recipe is from Cicero Sings, in British Columbia. She says its "an easy meal for one." It's also easy to cook up some extra servings to slice on top of a salad or reheat the next day. Cicero's idea to use Parmesan cheese and sesame seeds in place of the breadcrumbs is delicious!

Simple, Easy, Tender Chicken Breast (with Cicero's changes in parenthesis)

  • 1 skinless, boneless chicken breast half
Coat thinly with a mixture of ...
  • Mayonnaise mixed with herbs of choice. (I used a combination of curry spices).
Coat with bread crumbs ...
(I didn't have any so used a combination of sesame seeds and Parmesan).

Bake uncovered in a 425 degree F (220 degrees C) oven on a greased shallow baking dish for 30 minutes or until juices run clear. (I used my toaster oven and only put it to 400 degree F.)
